Boulanger cakes (Egg plant)

I recently discovered this one of a kind and very delicious recipe, I had to share. Its is made with roast Boulanger (egg plant). At first I was a bit skeptical but nevertheless I tried it and it was wonderful. Hope you enjoy it as much as I did.

Ingredients
2 large boulangers
6 oz breadcrumbs or biscuit crumbs
2 tbsp chopped eschallot
2 tbsp chopped celery
2 eggs
1 tbsp margarine
salt to taste
pepper to taste
oil for frying

To garnish: chopped parsley or celery

Method

1. Roast the boulangers
2. Remove the skin and mash
3. Add 2\3 of the crumbs, the eschallot and celery, and salt and pepper to taste to the mashed Boulanger
4. Beat 1 egg
5. Add margarine to the mixture and sufficient beaten egg to bind together. Shape the mixture into cakes
6. Beat the remaining egg and use to coat the cakes together with the remaining dried crumbs
7. Garnish with parsley or celery
Makes: 10 cakes

Guyanese Tennis Rolls

As promised the secret recipe. Hope all my readers try this delicious rolls as this wonderful bread is not only enjoyed by Guyanese but all lot of non-Guyanese as well.

I have tried this recipe with both all purpose flour and whole wheat flour. Both were as tasty as expected. So for all those who prefer the whole wheat way all you do is substitute the all purpose flour with whole wheat flour; instead of 11/4 tbsp yeast, use 11/2 tbsp yeast and a bit more lemon zest. 

I always cheat the recipe and add more zest since I just love the smell and taste...

Ingredients
31/2 cups all purpose flour
11/4 tbsp yeast
3/4 cup warm water
1/4 cup melted butter
1/2 cup warm milk
1/2 tsp salt
1/4 cup sugar
1tsp lemon zest
1/2 tsp vanilla 

Method
In a large bowl place warm water and sugar. Stir a little to dissolve sugar then sprinkle yeast onto mixture and let sit for about 10 minutes.

Add warm milk, melted butter, lemon zest, vanilla and salt to the yeast mixture.

Now slowly add the flour a little at a time and mix all the ingredients together to form a smooth dough. Knead for about 15 minutes. This can be done using a stand mixer but I prefer the old fashion way, my hands.

Cover bowl with a clean cloth and let sit for 45 mins to allow dough to rise. Dough should double in size.

Place dough on a floured surface and knead for about 1-2 minutes to form a smooth ball. Then cut dough into 8-12 even pieces depending on the size of rolls you want. Roll them into balls. I usually make 8 balls. I love my tennis rolls big!

Place balls on greased pans and let rise for 40 minutes. 

Preheat oven to 375 degrees and bake for 20 minutes or until golden brown. Remove from oven and brush with butter.

The secret recipe...yum

So I have recently tried a recipe that has been and still is one of Guyana's most hidden recipe for ages.

Nevertheless, I got my hands on it, tried it and it was fantastic....Tennis Rolls! Yes, you read correct, Tennis Rolls...I have it! When you try this, you will think its a bakewell. Its that good and perfect.

In my next blogging session I will share with you this fantastic recipe.

Who am I?

I have been living on this small island of Nevis almost four years now. It may not seem like much but when you are not in your homeland, it feels like centuries. Those of you who are in my position knows the feeling. The food is different. The culture and even the morals and norms are unlike what I'm accustom to. It's not a bad thing, its just not home. 

There is no place like home. 

For all the years I have been living here I am a stay at home mom who quit my job to start a new chapter in my life with a few hiccups but no complains. Maybe one day I may reconsider going back to work but right now I am enjoying my children. 

 As a stay at home mom, I do have an advantage. Not only do I get to spend ample time with my family but I have lots of time for myself. I do try to make very good and productive use of my time. Cooking and recreating Guyanese foods is one the many uses of my time. 

I intend to share my journey with all my wonderful fans. Who knows, I may even share recipes of some well kept secrets for some of Guyana's most sought foods.
